Aspen is filled with many restaurants that serve both tourists and locals alike. One of those options is the newly re-located Syzygy Restaurant. Owner Walt Harris moved from his old space, which is now occupied by the newly opened Silver Queen, to his beautifully decorated spot at 308 East Hopkins Street.

Syzygy will tantalize your taste buds with gourmet delicacies with just a touch of molecular gastronomy. Dishes you have to try are the buffalo carpaccio; thinly sliced buffalo served with roasted garlic panna cotta and the Pacific snapper with seared skin (I can taste the perfectly grilled snapper and the crunch of the salty skin now) with house made tomato agnolotti bathed in citrus onion consommé. Seriously? Chef Tom Fritz and his trusty sous chef Dan Silver continually put out delectable food, and that's just two of the very tasty dishes.

To match the delicious fare Syzygy has an equally impressive wine cellar. It's not all high priced Bordeaux's or Burgundy's but a nice balance of affordable to "ask the sommelier" selections. You can choose from a 2007 Vieux Telegraphe Telegramme Chateauneuf-du-Pape for $75 to a 2006 Joseph Drouhin Montrachet "Marquis de Laguiche" for $950.

Syzygy's commitment to sustainable seafood and local produce doesn't set them apart from other restaurants in Aspen, but what makes this a destination is the dining trifecta we all search for; well executed food, service and a wine list that serves both neophytes and oenophiles.
